After adopting a vegetarian diet, I discovered that my family still enjoyed seafood. In order to encourage them to consider reducing their meat consumption, I decided to improve my seafood recipes and contribute to their pescatarian lifestyle. Compromise! This particular dish, a cherished classic, is now the only occasion when I allow myself to indulge in seafood. The flavors harmonize perfectly, creating a delightful culinary experience.


Now that we are transitioning towards a more Vegan-ish lifestyle, I've been trying out different recipes found online and YouTube and wanted to share my journey with this. This recipe is one of my favorites! 🌱🌿


This recipe doesn't take too much prep but if you are a working mom, doing some prep the night before may convince you to prepare on a school night if not, weekend vibes it is!! And it's healthy!!

Ingredients You'll Need:


Salsa

  • 1 pineapple

  • 3/4 pineapple chucks

  • 1 jalapeno

  • 1/2 tomatoes

  • 1/3 red onion

  • 2 tbsp. fresh cilantro

  • 1 lime juice

  • salt and pepper to taste


  • 1 salmon fillet

  • 10-15 shrimp

  • 2 tbsps. Cajun seasoning (Slap Ya Mama brand or make your own with paprika, garlic powder, dried oregano, sea salt, onion powder, cayenne and black pepper)

  • 3 tbsps. olive oil


Instructions:


  • Instructions for Making the Salsa: Finely chop tomatoes, red onions, jalapeno, and cilantro, then mix them with diced pineapples in a bowl. Squeeze in the juice of a fresh lime

  • Cook the Rice: Cook your rice according to the package instructions, ensuring it is light and fluffy. Add salt, pepper and butter to add flavor.

  • Season the Seafood: Season the salmon fillets and shrimp with Cajun seasonings. Rub and massage in this seasoning and let marinate for 10 to 15 minutes.

  • Sear the Seafood: In a hot pan with olive oil, sear the marinated salmon and shrimp until they are cooked to perfection and develop a golden crust.

  • Serve and Enjoy: Transform the pineapple into a bowl by halving it and scooping out the pineapple flesh. Then, fill it with rice, salsa, and finish by adding the seared salmon and shrimp on top.
